Chicken is such a versatile protein. You may feel like you eat it all the time and are tired of the same thing over and over again. Hopefully this recipe will spice up your life and your meal time. It has a nice kick for your taste buds! This yummy chicken can be put in a tortilla, on top of a bed of greens or made with other sides for a delicious and complete meal.
Cilantro Lime Chicken
Ingredients
4 chicken breasts
Marinade:
1 tablespoon red chili flakes
¼ cup cilantro, fresh, diced
4 garlic cloves, minced
1 lime, zest
1 lime, juiced
1 tablespoon honey
2 tablespoon olive oil
1/2 teaspoon cumin
Directions
- Place all marinade ingredients in a gallon plastic bag. Mix marinade ingredients together in bag and then add the chicken breasts. Marinate chicken in the refrigerator for 30 minutes to 24 hours. (I marinade the chicken overnight and it had a great flavor.)
- Grill chicken about 8-10 minutes per side. Use your handy dandy food thermometer to check the internal temperature. The internal temperature should register 165 degrees F in the thickest part of the chicken and hold that temperature for at least 15 seconds in order to be fully cooked.
