On-the-Go Stuffed Bell Peppers

We are all busy this time of year. It seems like spending time in the kitchen preparing a delicious meal is just out of the question if it takes too much time. Today I wanted to share one of my favorite recipes that takes little time and effort to prepare.

While stuffing your bell peppers might look prettier, looks is not what I go for with this dish. It’s all about speed. If you can multitask by cooking the meat while you are chopping, it will go even faster. The meat I like to use in this dish is Jennie-O Hot Turkey Sausage. The sausage adds a little more flavor and spice to the dish. Also, I like to add more veggies by putting a salad with this dish (as seen in photo).

The cooking process is about an hour. That can be good or bad sometimes. The good thing, is once the dish is in the oven, you can now spend time with your loved ones, Christmas gift shopping online, decorating the house or just relaxing.  I hope you enjoy!

On-the-Go Stuffed Bell Peppers
4 medium to large green bell peppers, chopped
1 onion, chopped
1 pound ground meat
2 cups tomato sauce, no salt added
2 cups water
1 cup uncooked rice

1. Preheat oven to 350 degrees F.
2. Cook ground meat and set aside. (I tend to chop the pepper and onions while I cook the ground meat to cut down prep time.)
3. In a 9×13 glass dish, combine chopped peppers, onion, ground meat, tomato sauce, water and rice. Stir evenly and bake.
4. Bake covered 30 minutes and then another 30 minutes uncovered or until rice is done.
